Hip Wine Bars in Amsterdam (Not Just Natural)

Natural wine is this guide's center of gravity, but a handful of top, hip bars and shops earn a place on other merits entirely. Shiraz Jardin des Vins, a canalside bar near Leidseplein, has been repeatedly voted the best wine bar in the Netherlands on the strength of its classic, deep list — not a natural-wine angle. Bâtard's century-old Burgundy collection and Wijnbar Paulus, run by a member of the Kwast family of Dutch wine importers, both make the same case: a serious wine list doesn't need a natural-wine label to be worth the visit.
